From Chelsey’s Kitchen to Yours: Oatmeal Banana Muffins

INGREDIENTS:
- 2 bananas
- 2 cups of oatmeal
- 1 cup greek yogurt
- ¼ cup of stevia
- 1 ½ teaspoon of baking powder
- 1 teaspoon baking soda
- 2 eggs
- ½ cup dark chocolate chips
- ½ cup coconut flakes
- 1 teaspoon cinnamon
DIRECTIONS:
Preheat oven to 400 degrees and prep your muffin tin with liners (12).
Then, mix the bananas, oatmeal, yogurt, stevia, baking powder, baking soda, eggs, coconut flakes, and cinnamon in a large bowl with a blender/mixer until banana is mixed in smoothly.
Add in most of the chocolate chips by hand to your mixture (leave some out for your topping).
Fill the muffin tray with mixture ¾ of the way in each muffin slot. Top with extra coconut or chocolate chips by preference, I prefer extra coconut!
Bake for 10 minutes, let them cool, and serve as a snack or dessert!
